Banana Cake

Today’s offering is a Banana cake. This cake is actually more of a moist, coffee cake style. You could easily frost it, but that sweetness is not necessary. Fantastic and fast, you must try out this fun recipe with your kids. It uses no eggs or milk, and gets its leavening from vinegar and baking soda. Don’t grease the pan either. In fact, mix everything right IN the pan! Talk about easy.

Banana Cake

9 X 13 pan, 40 min, Oven 350 degrees

3 cups of unbleached flour
1 1/2 cups sugar
2 tsp baking soda
1/2 tsp salt
1/4 tsp cinnamon
1/4 tsp nutmeg

Blend together in the pan, set aside.

In separate bowl, combine:

1 1/4 cup mashed bananas
1 1/2 sticks melted butter
1/2 cup water
2 Tablespoons apple cider vinegar

Blend wet ingredients and add to dry ingredients all at once. Stir well until combined.

Bake for 40 minutes in a 350 degree oven.

For a nice touch, I add a cup of chocolate chips to the top of the cake before baking.
This recipe also holds up well if you cut and wrap for snacking. It is a great go-to treat, when the pantry is getting slim.
